Would you believe me if I said I wasn’t always a big fan of cooking? Or that I was never the type of person to hoard recipes like I am now?
After graduating with my first degree and getting my first full-time job, I realized that I had to feed myself. The problem? I wasn’t a good cook, and I found it to be exhausting. I would literally eat the same thing over and over again because I had no idea how to make things.
And then I met my now-husband.
He loved to cook and would cook for me often. Eventually, I realized that I didn’t want him cooking all the time. So I slowly started to learn how to cook, and the first thing I cooked was french toast. It was a bit undercooked.
I have now become a person that loves to cook and bake and hope to one day have a huge kitchen. And nothing makes me happier than being able to try a new recipe. But sometimes, I just find myself wanting something easy, but delicious. We all have those go-to recipes, right?
So for today’s blog post, I wanted to share some of my favorite go-to recipes. Some of these recipes will be healthy, and others are not. But I promise that every recipe I share has been made by me and trust me when I say they are delicious.
Skinnytaste’s Enchilada Soup
The first soup I ever made was Skinnytaste’s Enchilada Soup, and its one of my favorites to cook on those rare Texas days where it gets below 50 degrees. Making this soup is extremely easy as all you do is sautee onion and garlic and add the broth, tomato sauce, and chipotle adobo sauce. Then you place everything in the crockpot and wait for it to cook. I like to prepare it before going to bed so that I have a tasty lunch to take to work the next day. I do want to say that I add a bit of green salsa to give it more of a spicy kick.
The Chunky Chef’s Creamy Mac and Cheese
I cannot believe that I am sharing this recipe, but here I am. The Chunky Chef’s Creamy Mac and Cheese is the best mac and cheese I ever had, and it has made me very popular. Many of my friends LOVE this mac and cheese. I also made some to take to my work’s Thanksgiving potluck and it was gone in 10 minutes. The mac and cheese recipe is my top 3 potluck go-to recipes, and I highly recommend this recipe. It will literally change your life. I will recommend that you can substitute Swiss cheese for Gruyere since the price difference won’t hurt your pockets. The best part of this recipe? Ambitious Kitchen’s Nourishing Almond Flour Banana Bread
At the beginning of the coronavirus pandemic, all-purpose flour became a hot commodity. Wanting to bake, I told my brother to get me almond flour, and I would hope for the best. After much research, I came across Ambitious Kitchen’s Nourishing Almond Flour Banana Bread and decided to make it. And it was perfection! It was easy to make and my go-to recipe for when I was something sweet, but fast. I will say that I stray from the recipe: I double the chocolate chips, sometimes add Nutella, and I use this recipe for muffins. Even my husband, who is always wary about my almond flour recipes, loved it. I cannot recommend this enough for a delicious almond flour banana bread or muffins.
Skinnytaste’s Grilled Bruschetta Chicken
I am a massive fan of Skinnytaste if you cannot tell. Another one of my favorites is the Grilled Bruschetta Chicken. Now, I am not the biggest fan of tomatoes, but the sweetness in this recipe mixed with the chicken just makes my tastebuds explode with deliciousness. I like to eat this with some toasted bread to soak up the juices. And honestly, I don’t always make the chicken. I sometimes only make the bruschetta as a snack to munch on or to take to work. I highly recommend it, and it takes less than 20 minutes to make. Did I mention that you probably already have all the ingredients to make this?
Ruled. Me’s Buffalo Chicken Jalapeno Popper Casserole
Do you love jalapeno poppers as much as my husband? For a good while, my then-boyfriend wanted me to make jalapeno poppers all the damn time. I would have to say no and remind him that jalapeno poppers are not dinner material. Still, it got me thinking of someone who has made the poppers into a casserole. Ruled.Me did, and it has a permanent spot in my go-to recipe list. I first made this casserole for a party, and it was a hit. People kept asking me for the recipe, and my then-boyfriend kept asking me to make it. And I still make it when I want something exploding in flavor and spice. Honestly, just smelling it makes me drool.
Sally’s Baking Addiction’s Lemon Blueberry Layer Cake
If you follow me on Instagram, you have probably already seen me share pics of my birthday cake. When I realized that I was going to be spending my 27th birthday isolated with my husband, brother, and sister-in-law, I knew that I had to get creative with my cake. When I found the Lemon Blueberry Layer Cake recipe, I knew this was going to make my birthday cake. The instructions include the recipe for lemon cream cheese frosting, and honestly, this recipe made my birthday memorable. I did make some changes by adding some Deep Eddy’s Lemon Vodka to make it taste more like lemon since I had run out. I still dream about this cake, honestly.
Most of these recipes have also been eaten and praised by some of my favorite people. I highly recommend these recipes, and if you decide to make any, let me know what you think!
